This Carrot Cake is a recipe from my Grandmother’s recipe collection. I’m sure all our Grandmother’s has either a big book or file filled with little recipes cut from magazines and scribbled down recipes on pieces of paper that got written down from friends and family throughout the years.So here is one of my favourites, my Grandmother’s carrot cake.
Carrot Cake
Ingredients:
- 500ml Flour
- 10ml Baking Powder
- 10ml Baking Soda
- 5ml Salt
- 10ml Cinnamon
- 4 Eggs
- 250ml Oil
- 500ml Sugar
- 350g Carrots, grated
Method:
Sift the flour, baking powder, baking soda, salt and cinnamon together. Beat the eggs, oil and sugar together and add the carrots, mix well. Fold the dry ingredients into the egg mixture. Bake for 65mins at 160 degrees C.
Frosting:
- 250g Cream Cheese
- 15ml Oil
- 250ml Icing Sugar
Mix everything well and spread over cake, decorate with nuts
~ For a different kick add nuts into the batter too.
