Homemade Mixed Berry Ice Cream

Ever since I started watching Masterchef I have been crazily pining over an ice cream maker of my very own. I love ice cream, frozen yogurt, sorbet, slushies you name it, if it comes frozen I’ll eat it. So for Christmas 2013 my husband got me my own ice cream maker as a Christmas present. It is not one of those fancy machines you you see on T.V where you just add your mix and and there it goes, this one has a freezer bowl that you have to pre-freeze for at least 8 hours, so I just keep my bowl stashed in the freezer, but it’s true, I really love my ice cream maker. Mixed Berry Ice Cream.

Mixed Berry Ice Cream

I was very impressed with myself when I made my first custard based ice cream and it came out perfect. Again I read up online and improvised my own recipe based on a couple of recipes.

Ingredients:

  • 250 ml Cream
  • 350 ml Milk
  • 6 Egg Yolks
  • 125 ml Castor Sugar
  • 1 Vanilla Pod – Slice open and scrape out the seeds
  • 1 tsp Corn Flour
  • 1 Cup of Berry Puree – I used the frozen mixed berries from woolies, defrosted them, mashed them with a blender and pushed them through a sieve.

Method:
Heat the milk and cream together with the vanilla seeds until it’s nearly boiling, but don’t let it boil! Take off the heat. Mix the corn flour with the egg yolks and castor sugar, beat until it’s light yellow and creamy. Stir the egg mixture in with the milk mixture,  put back on the heat, keep mixing until the mixture thickens. Again, don’t let it boil, it will cause your mixture to split! When your mixture reaches a custardy consistency take off the heat and mix in your berry puree.

Let it cool down till room temperature and put it in the fridge for about 6 hours or until it’s really chilled. Turn on your ice cream maker, slowly pour your custard mixture into your machine and watch the magic happen! After about 15 – 25 minutes your ice cream will be a little bit softer than a soft serve, scoop it in a bowl and freeze it for 2 hours or so. Enjoy your homemade ice cream!

You can replace the berries with anything you would like to experiment with and you can add only milk if you don’t want to use cream (600 ml in total).
