Green Fig Cake 1My grandmother turned 88 years old on the 8th of April.  I wanted to make her a granadilla cake, but oh my, no granadilla pulp at Woolworths and who has time and patience to stand in the line at Pick n Pay for only one item. Definitely not me! Green Fig Cake.

I looked around in the baking isle and my eye fell on the Fig Coulis, well, figs are one of my grandmother’s favourite fruit and the consistency is very much the same as granadilla pulp, so then, just there I decided ~ Green Fig Cake it will be.

I used one of my favourite recipes I found on Homemade Heaven for granadilla cake and changed it for my Green Fig Cake.

Green Fig Cake

Ingredients:
4 Eggs
4 Teaspoons of Baking Powder
1 & 1/4 Cups of Sugar
200g of Butter
1 Packet of Fig Coulis
About 150ml Milk
1 & 3/4 Cups of Cake Flour
3 Table Spoons of Corn Flour

Method
Separate the eggs, whisk the egg whites until they form soft peaks, add 1 teaspoon of baking powder and the sugar, whisk well, add the egg yellows and whisk until everything is mixed well.

Measure 115g of the fig coulis, scoop into a jug that can go into the microwave, top it to 250ml with milk, add in the butter.  Put in the microwave for 1 minute

Sift together the cake flour, 3 teaspoons of baking powder and the corn flour. You do not need to add any salt if you are using salted butter.

Now, mix in the flour mix and milk mix to the eggs, a bit of each at a time until everything is well combined.

Pour into 1 or 2 prepared cake pans and bake at 180oC (1 pan 50 – 55mins, 2 pans 35 – 40 minutes)

Let cake cool down.

Make frosting with the remainder of the coulis, butter and icing sugar. Decorate your cake!
