I’ve posted this recipe before when I was participating in BlogVember but this cake is so good it deserves it’s own post! I’m not sure who the original creator of this delicious cake is but it’s been doing it’s rounds on facebook for a while and I just decided one day to make it and it was divine. I’ve since made it for different occasions and everyone is always raving about it and fighting about the last piece of deliciousness. Amarula Chocolate Cake.
Amarula Chocolate Cake
Cake Ingredients:
- 60 ml Cacao
- 125 ml Boiling water
- 3 Eggs
- 220 ml Sugar
- 60 ml Oil
- 250 ml Cake flour
- 10 ml Baking powder
- 2 ml Salt
Syrup Ingredients:
- 200 ml Sugar
- 250 ml Water
- 60 ml Amarula liqueur
On Top:
- 1 tin of Caramel Treat
- Whipped cream – optional
- Flake or grated chocolate – optional
Method:
Pre heat the oven to 180°C. Mix cacao and boiling water to create a paste, let cool. Beat eggs, sugar and oil together until light and fluffy, add the cacao paste and mix well. Sift all the dry ingredients together and mix well with the egg mixture. Spoon the batter into an oven safe dish and bake for 20 minutes. In the meantime boil the water and sugar together until the sugar is dissolved, simmer for 10 minutes, take off the heat and add the amarula. As soon as the cake gets out of the oven poke it with a fork a couple of times and pour the syrup over. Spread the caramel over as soon as it’s cooled completely and decorate with the cream and chocolate if you prefer.
I just love how this cake stays in the dish you baked it in, with me taking a cake out of a tin is usually the part where things start to go terribly wrong! Go on, try it this weekend…
