Today I have another family favourite for you, and that is my mom’s malva pudding, or as we refer to it, bruin poeding. It’s the only thing my one brother always asks for when he hears us discussing desserts. It’s yummy on a cold winters day with Sunday lunch or even with a braai. Malva Pudding aka Bruin Poeding
Malva Pudding aka Bruin Poeding
Ingredients for the pudding:
- 250 ml Sugar
- 5 ml Salt
- 250 ml Milk
- 60 ml Apricot Jam
- 2 Eggs, beaten
- 60 ml Vinegar
- 7.5 ml Baking Soda
- 500 ml Cake Flour
- 10 ml Baking Powder
Method:
Stir the sugar, salt, milk, apricot jam and eggs together, mix the vinegar and baking soda, add to the other ingredients and add the flour and baking powder, mix everything well. Spoon into a buttered deep oven safe dish and bake for 90 minutes at 180°C.
As soon as the pudding is done baking immediately pour the following sauce over:
Ingredients for the sauce:
- 1250 ml Water
- 750 ml Sugar
- 250 g Butter
- 10 ml Vanilla Essence
- Salt to taste
Method:
Place all the ingredients in a pot and bring to the boil, let it boil for 5 minutes, after pouring it over the pudding place everything back into the oven for another 10 minutes so that the sauce can seep into the cakey part.
This is an extremely moist pudding and can be enjoyed with custard or ice cream and even custard & ice cream!
